Lobster Yee Mein / Long Xia Yi Mein
3 pound lobster, cut up into serving sized pieces and lightly dusted with cornstarch
3 large cloves garlic about 1 tblsp
6-8 slices ginger
sauce mixture:
2 tblsp oyster sauce
1/2 tblsp light soy sauce, like Kimlan brand
1/2 tblsp super special soy sauce, Kimland brand or normal soy sauce, don't used 'dark" soy sauce
1 tblsp shao xin jiao, chinese rice wine for cooking
1/2 tsp sesame oil, not more
1/8 tsp white pepper
1 tsp sugar
add 1/2 cup water
6, about a bunch of scallion cut into 1 inch pieces
1 pack emein - on package usually says 12 servings - boiled for 3 minutes and drained
heat 3 tblsp oil on medium heat with garlic and ginger in it until hot
add lobster
stirfry lobster until cooked through. May need to cover for a few minutes at a time and check frequently to be sure not burning.
Remove lobster.
Add noodles and sauce mix to pan on medium heat and stir until totally hot and mixed, then add green onions and lobster and serve. or, serve noodles in plate and place lobster on top.
